Don will talk about the history of the Olive, the history of the Olive in California and give a thorough description of how to make the Olive edible with out lye. Discussion of the many varieties of Olives, when to pick and other important tips will be covered. Three ways to de-bitter Olives…the Greek style brine cure, water cure and dry salt cure with demonstrations making the whole process easy for all. Followed by tasting Olives with cheese and crackers. Leave time to explore The Olive Press. A short tour of the mill will be offered. Taste Olive oil and browse the gift shop. Olive oil experts can answer your questions. All this can be enjoyed with fabulous Jacuzzi Family Vineyards wine, if you would like. A discount will be offered in the tasting room for attendees interested in wine. YUM!!!
